Mint Julep Brownies

ingredients
4 ounces unsweetened chocolate
1 cup butter or margarine
4 large eggs
2 cups sugar
1 1/2 cup flour
1/2 teaspoon salt
2 tablespoons bourbon
1 teaspoon peppermint extract
1 tablespoon powdered sugar
Garnish: fresh mint leaves
directions
Combine chocolate & butter in a heavy saucepan, cook over low heat, stirring constantly, until chocolate melts. Let stand 10 minutes.
Beat eggs at medium speed with an electric mixer until thick & pale (about 2 minutes), gradually add sugar, beating well. Add chocolate mixture, flour & next 3 ingredients, beat at low speed 1 minute.
Spoon into a lightly greased & floured 13x9x2" pan. Bake at 350 F. for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool on a wire rack 10 minutes.
Sprinkle with powdered sugar, cut into bars. Garnish, if desired.

These are outstanding brownies! I cooked them the longer time, so the center would be done, and the edges seemed dry. After I cooled them in the pan, I covered them, and after a few hours, the edge brownies had gotten softer, from the moisture re-distributing. So, make them ahead and cover them. If you must serve them right away, cut off the crispy edges. These brownie are very dense and rich, a small piece is satisfying. The bourbon and mint add a nice flavor to the chocolate flavor. My guests loved them, and I will make them again.
