This is a great way to make mojitos for a group instead of making them individually. Recipe is easy to double. Look for simple syrup with the drink mixers at the store if you don't want to make it from scratch.

3/4 cup loosely packed mint leaves
ice
1 cup freshly squeezed lime juice
2/3 cup simple syrup
1 1/2 cup rum
3 cups club soda

directions

Using a mortar and pestle, place the mint leaves in the mortar (bowl) and mash or "muddle" them with the pestle. You can also use the back of a spoon to muddle them. This will release the flavor from the leaves.

Fill a pitcher 1/4 to 1/3 full with ice. Add the mashed mint leaves to the pitcher.

Stir the lime juice, simple syrup, rum, and club soda in gently. Add more ice to the pitcher to fill it the remainder of the way.

Stir the mixture well then serve in individual glasses.

    What an easy, straightforward recipe. I served this at a birthday party last night and everyone RAVED about it as the best mojitos they ever drank. I've never had a mojito so I was at a loss to know what they should taste like but I had LOTS of mint in the garden so thought why not? I used less lime juice in the third pitcher (ran out of limes) but no one seemed to notice. I think the key was the fresh mint (and lots of it). I made up two pitchers ahead of time, put them in the fridge, and added the club soda and ice when guests arrived.
