As the weather heats up, this cocktail will be your new favorite drink. It's made with fresh mint that's muddled (crushed) with sugar and lime. It's then mixed with ice, rum, and club soda for a wonderfully refreshing drink.

3 fresh mint sprigs
2 teaspoons sugar
3 tablespoons fresh lime juice
1 1/2 ounce light rum
club soda, chilled
1 slice lime
additional fresh mint
Place the mint in the bottom of a tall glass. Crush the mint lightly with a muddler or the back of a long spoon. Add the sugar and lime juice and crush a little more, just to combine the ingredients.
Add the rum and enough ice to mostly fill and stir it gently. Top the cocktail off with club soda. Add a slice of lime and a sprig or two of fresh mint as garnish. Serve immediately.

Very good! A little too much lime for my taste, but easily fixable!

I'm particular about my mojitos - they really do have to have the right balance of ingredients and this one was absolutely perfect.

We like the ratio of ingredients in this recipe. The lime isn't overpowering yet adds plenty of flavor. If you don't have superfine sugar you can add powdered sugar instead.
