Baked Salmon With Rosemary Rub

ingredients
2 pounds fresh salmon fillets
non-stick cooking spray
2 tablespoons chopped fresh rosemary leaves, according to taste
2 tablespoons olive oil
2 teaspoons fresh lemon juice
1 teaspoon coarse ground black pepper
1 teaspoon kosher salt
directions
Heat oven to 450 degrees F. Spray a large baking sheet with nonstick spray.
Place salmon on baking sheet, skin-side down. Combine rub ingredients in a small bowl. Spread rub evenly over top of salmon. Bake salmon about 15 minutes, or until the color turns from translucent to opaque and fish just begins to flake with a fork. Do not over cook.
Cut fillet into portions, just down to the skin. Lift fish from skin with a spatula; remove to a plate. Serve immediately.

I gave this recipe a 5 stars because it's hard to mess up salmon. I do think that if you are not a big rosemary fan you may want to consider cutting back on the amount you use, as suggested in the recipe.
