Pineapple Brunch Casserole

ingredients
1 can (8 ounce size) crushed pineapple, drained
1 cup baking mix
1 cup milk
4 eggs, lightly beaten
6 tablespoons butter or margarine, melted
1 teaspoon prepared Dijon mustard
1/2 teaspoon onion powder
1 pinch nutmeg
4 ounces cooked ham, diced
1 cup shredded Monterey Jack or Cheddar cheese
2 green onions, finely chopped
directions
Preheat oven to 350 degrees F. Reserve 2 tablespoons pineapple for garnish if desired.
Combine baking mix, milk, eggs, butter, mustard, onion powder and nutmeg in large mixer bowl until smooth. Stir in ham, cheese, onions and pineapple.
Pour into a 9" pie plate. Bake for 35-40 minutes until set. Garnish with reserved pineapple, additional cheese and green onions, if desired.
