Arroz a la Valenciana

ingredients
2 tablespoons vegetable oil
1 cup uncooked white rice
4 cloves garlic, thinly sliced
2 tablespoons finely diced onion
2 cups cold water
salt, to taste
4 chicken breasts, skinned and cut into 1/4-inch slices
20 medium shrimp, peeled
4 large iceberg lettuce leaves
1 tomato, sliced and quartered
4 radishes, sliced
directions
Pour oil in a large saucepan and heat on high. Add rice and saute 1 to 2 minutes, stirring frequently. Add garlic and onion and saute 1 minute, stirring frequently. Pour 2 cups cold water into the saucepan. Add a sprinkle of salt and bring to a boil. Reduce heat to medium-low and cover the pan. Simmer 5 minutes.
Add chicken slices, cover the pan and simmer 5 minutes, or until no longer pink. Add shrimp, cover, and simmer 3 to 5 minutes.
Place a lettuce leaf on each of individual plate. Divide rice, chicken and shrimp mixture among the plates. Garnish with tomato and radish slices.
