ingredients
HUMMUS
1 can (15 ounce size) chickpeas, rinsed and drained
2 cloves garlic
1/2 cup tahini
1 lemon, juiced
1/2 teaspoon cumin
salt and pepper, to taste
1/4 cup olive oil, and more, to taste
ROLL-UPS
4 lavash, white or whole-wheat
4 canned roasted red peppers, thinly sliced
1 English cucumber, very thinly sliced
2 tomatoes, thinly sliced
1/2 head romaine or red leaf lettuce, cored and cut up
olive oil, or sprinkling
red wine vinegar, for sprinkling
salt and black pepper, to taste
directions
HUMMUS: In the bowl of a food processor, work the chickpeas in on-off motions until they are coarsely chopped. With the machine running, add the garlic through the feed tube and let the motor run until the garlic is coarsely chopped.
Add the tahini, lemon juice, cumin, salt, and pepper. When the mixture is smooth, scrape down the sides of the bowl and let the motor run. Pour the 1/4 cup of oil through the feed tube a little at a time until it is all added. Check the consistency. Add more oil, 1 tablespoon at a time, until the hummus is the consistency of sour cream.
ROLL-UPS: Set the lavash on the counter and spread each with a thin layer of hummus. Add the red peppers, cucumber slices, tomato slices, and lettuce. Sprinkle with oil, vinegar, salt, and black pepper. Roll up the lavash as tightly as possible. Use a serrated knife to cut them in half and serve each person 2 halves.
