Pumpkin Hummus

Hummus with fall flavors. Pumpkin puree is mixed with tahini and seasonings and garnished with toasted pumpkin seeds.

ingredients

2 tablespoons tahini
2 tablespoons fresh lemon juice
1 teaspoon ground cumin
1 teaspoon olive oil
3/4 teaspoon salt
1/8 teaspoon cayenne pepper
1 can (15 ounce size) pumpkin puree
1 clove garlic, chopped
2 tablespoons chopped fresh parsley
1 tablespoon toasted pumpkin seeds
pita wedges or veggies, for dipping

directions

Meanwhile, combine the tahini, lemon juice, cumin, olive oil, salt, cayenne pepper, pumpkin, and garlic in a food processor. Process the mixture until smooth. Add the parsley and pulse-process until just mixed.

Transfer the pumpkin hummus to a serving dish. Garnish with the toasted pumpkin seeds and serve with pita wedges or veggie dippers.

    So I almost gave this only three stars because like the other review all I could taste was pumpkin. I was so disappointed because I had made this for a party. BUT thankfully I had made it the day before. I tasted it this morning and it was 100 times better! The recipe doesn't say it but this HAS to sit overnight to taste good. Now I can taste the tahini and garlic and spices but all I could taste before was pumpkin. Now I actually wish I had doubled it because it's really delicious.

    I love hummus, so I thought I'd give this easy recipe a try. While it wasn't bad, it tasted a little too much like eating the cold pumpkin puree straight out of the can. On the plus side, I guess you could say the pumpkin was not overshadowed by the tahini and other ingredients.

    The hummus is nice and creamy with the addition of the pumpkin puree. Good flavor and the toasted pumpkin seeds are a nice touch!

    so... um... why are we turning on the oven? what am i missing here folx.

    • Must have been omitted directions for toasting either the pumpkin seeds or pita wedges.
