Some roasted red pepper adds tremendous flavor and color to hummus. A drizzle of good quality olive oil, a dash of smoked paprika on top? You've got a gourmet dip on your hands.
1 can (15 ounce size) chickpeas, rinsed and drained
1/2 cup drained roasted red peppers
2 tablespoons chopped flat-leaf parsley
2 tablespoons fresh lemon juice
2 tablespoons tahini (sesame paste)
2 cloves garlic, chopped
1/2 teaspoon salt
extra-virgin olive oil
Combine the chickpeas, roasted peppers, parsley, lemon juice, tahini, garlic, and salt in a food processor and puree until smooth. Transfer to a bowl.
Drizzle the hummus with a little olive oil and serve with pita bread, crackers, or veggie dippers. Also makes a good sandwich spread.
