It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


1 pound pork tenderloin
4 teaspoons oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 zucchini, halved lengthwise, then crosswise
1 box (6 ounce size) tomato lentil couscous mix
Heat BBQ grill. Rub pork with 2 tsp oil, then sprinkle with 1/4 tsp salt and 1/8 tsp pepper. Toss zucchini with remaining oil, salt and pepper.
Grill pork and zucchini, pork until done and zucchini until charred and tender. Remove meat to a cutting board and cover with foil, let rest while preparing couscous as box directs.
TO SERVE: Cut pork in thin slices. Serve with couscous and zucchini.

I don't typically like to use recipes that call for packaged mixes, but I have to say, this one was worth it. The complete meal is simple and delicious. You can use other couscous mixes, or make your own from scratch (we've got tons of couscous recipes). The flavors for the pork and zucchini were so simple yet they didn't need anything more than the salt and pepper. Highly recommend this recipe for a quick and tasty meal.
