ingredients
1 pound cooked pork, cut into 1/2-inch cubes
1/2 package (10 ounce size) spinach, washed and torn into bite-sized pieces
2 medium carrots, peeled and shredded
1 medium apple, peeled, cored, and chopped
1 bottle (8 ounce size) honey-mustard dressing
2 tablespoons chopped peanuts (optional)
directions
Combine the pork, spinach, carrots, and apple in a large bowl. Drizzle with the dressing. Toss the salad to coat the ingredients in the dressing.
Serve immediately in individual salad bowls. Top each serving with chopped peanuts, if desired.
