Asian Pork Salad

ingredients
2 cups thin strips cooked pork
1/2 cup cashews, halves or pieces
2 carrots, peeled and julienned
1 rib celery, julienned
1 bunch green onions, sliced
fresh spinach leaves
Dressing
1/3 cup olive oil
1/4 cup rice vinegar or white wine vinegar
2 tablespoons soy sauce
1 teaspoon ground ginger
1/4 teaspoon black pepper
directions
Combine the pork, cashews, carrots, celery, and green onions in a bowl.
In a blender, combine the olive oil, vinegar, soy sauce, ginger, and black pepper. Process on medium speed to combine.
Pour half of the dressing over the pork salad. Toss to mix.
Place spinach leaves on chilled salad plates. Top the spinach with the salad. Serve the remaining dressing on the side.
