ingredients
8 cups torn leaf lettuce
1 cup chilled, cooked corned beef
OR
2 packages (3 ounce size) sliced corned beef, cut into thin strips
1 can (8 ounce size) sauerkraut, chilled, drained, and snipped
1 cup cubed Swiss cheese
3/4 cup Thousand Island salad dressing
1/2 teaspoon caraway seed
Rye Croutons
2 1/2 slices rye bread
1 1/2 tablespoon butter or margarine, softened
directions
For Croutons: Brush both sides of bread with butter. Cut bread into 1/2-inch cubes.
Spread out on a large shallow baking pan. Bake in a 300 degrees F oven for 20-25 minutes or until cubes are dry and crisp. Stir at least once. Cool.
In individual salad bowls, place torn lettuce. Arrange corned beef, sauerkraut, cheese, and croutons atop lettuce in each bowl.
Combine Thousand Island dressing and caraway seed and pour over salad.
