Fresh, zesty, and full of color, this tossed salad with orange vinaigrette is perfect for a light lunch or as a vibrant side dish.

6 cups mixed salad greens
1 cup sliced strawberries
1 can (11 ounce size) mandarin orange sections, drained
1/2 small red onion, sliced
1/4 cup vegetable oil
1/2 teaspoon finely shredded orange peel
3 tablespoons orange juice
2 tablespoons white vinegar or cider vinegar
1 teaspoon sugar
Toss salad greens, strawberries or orange sections and red onion in large salad bowl.
For dressing, combine vegetable oil, orange peel, orange juice, vinegar and sugar in screw-top jar.
Cover and shake well. Pour over salad greens mixture, tossing to coat.
