ingredients
1 cup all-purpose flour
1/4 cup sugar
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 large egg, lightly beaten
1 tablespoon vegetable oil
1/2 cup milk
1 teaspoon vanilla extract
  vegetable oil
9  firm ripe bananas, sliced into 1-inch pieces
directions
Combine first 4 ingredients in a small bowl. Combine egg, oil, milk, and vanilla in a large bowl. Gradually add flour mixture to egg mixture, stirring until smooth. 
 Pour oil to depth of 2 inches into a Dutch oven; heat to 375 degrees F. Dip banana slices into batter; fry in hot oil 3 1/2 to 4 minutes or until golden. Drain on paper towels. 
 NOTE: Plunge these banana fritters into your favorite dipper: honey, maple syrup, powdered sugar, or hot fudge.
