It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

A killer chicken salad is a great recipe to have in your arsenal. Celery adds a great crunch factor; if you like to spice things up a little just throw in some sriracha or red pepper flakes.

2 cups cooked chicken, cut into bite sized chunks
2 stalks celery, finely chopped
1 cup red or green grapes, slivered
1/2 cup mayonnaise
1/2 cup sour cream
1 lemon, juiced
1 tablespoon fresh tarragon, finely chopped
Kosher salt and freshly ground black pepper, to taste
Place chicken, celery, and grapes in large bowl. Combine mayonnaise, sour cream, lemon juice, tarragon in another bowl and season generously to taste. Stir into chicken mixture gently, just to combine.
Chill for several hours, to allow flavors to combine. Serve on a bed of lettuce or as sandwiches.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
What's the secret ingredient in these cakes? Pudding mix. It not only adds flavor but it gives the cake a richer, creamier texture. No one will know your secret ingredient!
