Slow Cooker Marinated Chinese Chicken Salad

ingredients
Marinade
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon dried red chile flakes
2 tablespoons honey
3 tablespoons soy sauce
2 tablespoons sesame oil
6 boneless, skinless chicken breast halves
Dressing
1/2 cup rice wine vinegar
1 clove garlic, minced
1 teaspoon ginger grated
1 tablespoon honey
Salad
1 large head iceberg lettuce
2 medium carrots, julienne
1/2 cup roasted whole peanuts, chopped
1/4 cup fresh cilantro, chopped
1/2 package maifun noodles, fried in hot oil
directions
In a small mixing bowl, combine the marinade ingredients. Place the chicken in the crock pot slow cooker and pour the marinade over, making sure each chicken breast is well coated. Cover; cook on LOW 6-8 hours or on HIGH 3-4 hours.
Remove the chicken from the stoneware and cool. Shred into bite-sized pieces. In a small mixing bowl, combine the dressing ingredients with 1/2 cup of the juice from the slow cooker.
In a large serving bowl, toss together the shredded chicken, lettuce, carrots, peanuts, cilantro and maifun noodles. Shortly before serving, drizzle with the salad dressing. Toss well and serve.

This turned out great. I ran out of honey so used orange marmalade in the dressing and it was a good substitute. Added some green bell pepper to the salad and skipped the noodles. I loved that this didn't call for hoisin sauce like so many Chinese chicken recipes. I didn't have that on hand anyway. This was popular with the family and cooking in the crock pot kept the house cool. Perfect for summer.
