ingredients
2 pounds fresh broccoli, cut in bite-sized pieces
1 red onion, chopped
1 pound Colby-Jack cheese, cubed in small pieces
DRESSING
1 cup balsamic vinegar
3 tablespoons mayonnaise
1/2 cup sugar
directions
Combine the first 3 ingredients in a large bowl.
In a separate bowl, combine the vinegar, mayo, and sugar. Stir with a fork until the mixture is smooth.
Do not pour the dressing over the broccoli mixture until just before serving. It tends to get soggy the longer it sits.
