Bistro Orange Roughy

The herby-lemon-wine sauce works great with this mild, medium-textured fish. Orange roughy can be hard to find these days so you can easily substitute another fish like tilapia or barramundi in this recipe.

4 orange roughy fish fillets, thawed if frozen
1 cup flour, for dredging
salt and pepper
1 tablespoon butter
1 pinch dried thyme
1 pinch dried basil
1 pinch dried parsley
1 clove garlic, sliced
1/4 cup white wine
1/2 lemon

directions

Pat the fish fillets dry with a paper towel.

Combine the flour with some salt and pepper (as desired) in a shallow dish. Dredge the fish in the flour and set aside.

Melt the butter in a large skillet over medium heat. Add the fillets and cook 3-4 minutes or until the edges start to brown then flip them over.

Sprinkle the fillets with the dried thyme, basil, parsley and garlic. Slowly add the white wine and a squeeze of lemon juice.

Let cook for 3-4 more minutes. The wine sauce will thicken somewhat.

Serve fish topped with the wine sauce and an additional squeeze of lemon juice.

    This is also my favorite way to prepare cod. Instead of dredging the fish in a seasoned flour, I use a wonderful product called Pride of the West All-Purpose Batter Mix. It has a wonderful flavor and a fine consistency for a velvety sauce.

    I made this for my wife and we both loved it. Excellent tasting and easy clean up, who could ask for anything more. I think I will cut back on the lemon next time as it was a bit bright and lemon is easily added later if desired.

    Very good recipe for Orange Roughy. Fast and easy. I only had two filets, but made it work. I used about 1/2 c of white wine and almost a whole lemon. I forgot the garlic, but it still turned out great. The extra lemon really helps to balance out the strong flavor of the roughy. Will make again.

    WOW! this fish was amazing. I made this for dinner last night and everyone just loved it. I included some grilled asparagas for a side dish. This dish is pretty simple and has amazing flavor. We used a White Zin since thats all we had and that worked just great. I definetly recomend making this dish on any evening, its pretty quick and well worth the compliments. My family actually thinks im some kind of pro chef now, haha! enjoy

    My family loved this orange roughy dinner! I wanted a little more sauce to spoon over the fish so I added a tad bit more wine. I didn't have basil, so I used a generous amount of Italian parsely along with garlic (2 cloves) and fresh thyme This is such an elegant dinner! Splendid recipe!
