2 orange roughy filets
1/4 cup mayonnaise
3 tablespoons Parmesan cheese
1 tablespoon lemon juice
salt and pepper, to taste
Season fish filets with salt and pepper. Mix the mayonnaise, Parmesan cheese, and lemon juice in a small bowl.
Broil fish filets for about 4 minutes with skin side down. Remove from heat. Turn fish over.
Spread mayonnaise over the top. Broil until bubbling and until the fish flakes. Serve immediately.

I've made this several times, using both catfish filets and tilapia loins. I generally add a bit of sriracha and chives. Quick, easy and very good.

This is a very good recipe! Orange roughy can be kind of expensive and difficult to find sometimes so other types of fish fillets can be used in its place and tastes just as good!
