Cherry cola and cherry preserves give these grilled wings a sweet glaze and light cherry flavor.
12 chicken wings
1 can (12 ounce size) cherry cola
2 tablespoons finely chopped fresh ginger
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup cherry preserves
salt and black pepper, to taste
Remove the chicken wing tips and cut the wings into drummies and flappers.
Combine the cherry cola, ginger, salt, and pepper in a saucepan over medium-high heat. Bring to a boil then reduce to a simmer. Let cook for 10 minutes or until the liquid is reduced to 1 cup.
Pour half of the mixture into a small bowl and stir in the cherry preserves. Cover the bowl and refrigerate.
Place the remaining cola mixture in a zip-top plastic bag. Add the chicken wings to the bag and seal shut. Turn to coat the chicken in the mixture. Place in the refrigerator to marinate overnight.
Preheat the grill to medium heat.
Drain the wings and discard the marinade. Season the wings lightly with salt and pepper.
Place the wings on the grill and grill for 30 minutes, turning the chicken as needed, until cooked through. Baste the wings with the cherry preserves mixture during the last 10 minutes of the cook time.
