Cumin and chili powder help heat up these hot wings. They are baked instead of fried and are falling-off-the-bone tender.
5 pounds chicken wings
10 ounces red hot sauce
1/2 cup butter, melted
1/4 cup ketchup
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
Preheat the oven to 350 degrees F.
Remove and discard the chicken wing tips. Separate the flappers and drummies at the joint.
In a saucepan over medium heat, combine the hot sauce, butter, ketchup, chili powder, cumin, and garlic powder. Bring to a simmer, stirring frequently. Remove the pan from the heat. Remove 1/2 cup of the sauce and set aside.
Place the chicken wing pieces on a broiler pan. Brush the wings on all sides with the remaining sauce (alternately, you can transfer the sauce to a large bowl and add the wings, stirring to coat them in the sauce then transfer to the broiler pan).
Place the chicken wings in the oven and bake at 350 degrees F for 20-25 minutes, turning occasionally, until cooked through and browned.
Brush the Mexican chicken wings with the reserved sauce before serving.
Pat the wings dry with paper towels before seasoning for better sauce adherence.
Spread the wings in a single layer on the broiler pan for even cooking.
Baste the wings with the sauce during baking for more flavor.
Reserve some sauce (or make extra) for serving to add a fresh splash of flavor.
Let the wings rest for a few minutes after baking for them to reabsorb some of the juices.
Adjust the seasoning of the sauce to your taste preference.
Use a baking rack on the broiler pan for crispier wings.
Serve the wings hot for the best taste and texture but they can also be served cold.

These were great! I liked that they were baked instead of fried (less mess). Very good flavor and the wings were nice and tender.
