These grilled chicken wings are the delicious combination of spicy and sweet. The wings are marinated in a blend of habanero peppers, pineapple juice, and vinegar and then grilled to perfection.
24 chicken wings
1 cup pineapple juice
2 tablespoons balsamic vinegar
2 tablespoons brown sugar
4 cloves garlic, minced
1 Habanero chile seeded and diced
1/2 teaspoon ground allspice
salt and pepper, to taste
Remove and discard the tips from the wings. Cut the wings at the joint to separate each wing into two pieces.
Combine the pineapple juice, vinegar, brown sugar, garlic, chile, and allspice in a saucepan over medium-high heat. Bring to a boil and let simmer for 2 minutes.
Remove the pan from the heat and let cool. When cool, place the mixture in a zip-top plastic bag or plastic container with a lid. Add the chicken wings to the pineapple mixture, turning to coat in the marinade. Seal the bag or cover the container and place in the refrigerator for 2 hours.
Preheat the grill to medium-high heat.
Drain the marinade from the wings. Sprinkle the wings with salt and pepper as desired. Place the wings on the grill. Cook for 10 minutes or until cooked through, turning as needed to brown on both sides.
Serve hot with your favorite dipping sauce, if desired.
