These wings are all about the seasoning. Unlike buffalo wings which are doused in a sauce, these wings are slathered in a combination of spices before being oven-baked.
12 chicken wings, tips removed
5 bay leaves
3/4 teaspoon caraway seeds
1/2 teaspoon cayenne pepper, more if desired
3/4 teaspoon ground cumin
3/4 teaspoon ground coriander
4 cloves garlic, chopped
1 1/2 teaspoon dry mustard
2 teaspoons paprika
3/4 teaspoon dried thyme
1/2 teaspoon salt
2 tablespoons brandy
2 tablespoons fresh lemon or lime juice
Preheat the oven to 375 degrees F.
Combine the bay leaves, caraway seeds, cayenne pepper, cumin, coriander, garlic, mustard, paprika, thyme, and salt in a food processor. Process until combined.
Add the brandy and lemon or lime juice. Process until it forms a smooth paste.
Brush the wings on all sides with the paste and place on a rimmed baking sheet (or in a large baking dish).
Place the baking sheet in the oven and bake at 375 degrees F for 30 minutes or until the wings are browned and crispy.
Remove from the oven and serve hot with your favorite dipping sauces, if desired.

A bit of work but worth the effort! Quite possibly the best wings I've ever had and I usually only like buffalo style wings not ones that are crisp like this. A new favorite around here!

These wings totally hit the spot! A flavorful and far healthier alternative to buffalo wings. I overbaked them a bit to get them to be extra crispy. If your family is anything like mine, go a head a prepare a double portion!

These wings are fantastic! The flavors are spicy, earthy, and citrusy all at the same time. A superior and gourmet recipe. We upped the cayenne a little bit and got them nice and cripsy over a hot grill, brushing the remaining marinade over them. Thanks!
