Bourbon And Molasses Glazed Chicken Wings

2 pounds chicken wings
3 tablespoons cider vinegar
3 tablespoons molasses
2 tablespoons Asian chili sauce
1/2 cup Dijon mustard
1/2 cup maple syrup
2 tablespoons bourbon
2 teaspoons soy sauce
non-stick cooking spray
kosher salt
freshly ground black pepper
directions
Remove wing tips from chicken wings and discard or save for making stock. Separate each wing into 2 pieces at the joint.
Combine vinegar, molasses, chili sauce, mustard, maple syrup, bourbon, and soy sauce in a large resealable plastic bag set in a shallow dish. Add wings, tossing to coat. Seal bag and marinate in refrigerator for 1 hour, turning bag occasionally.
Line a shallow roasting pan with heavy-duty foil; lightly coat foil with nonstick cooking spray. Drain wings, reserving marinade. Place wings in prepared roasting pan; sprinkle with salt and pepper.
Bake in a 375 degrees F oven for 30 minutes, spooning some of the reserved marinade over wings twice. Turn wings over; spoon on more of the marinade. Bake 10 minutes more; spoon on more of the marinade.
Discard any remaining marinade. Bake 10 minutes more. Serve warm.
