Apricot-Ginger Chicken Wings

ingredients
1 cup apricot preserves
1/4 cup crystallized ginger
2 cloves garlic, peeled
1/2 teaspoon salt
1/4 cup white vinegar
3 1/2 pounds chicken wings, with tips removed
directions
Heat oven to 450 degrees F. Line 15 x 10-inch jelly roll pan with foil. Coat foil with nonstick cooking spray.
In food processor, combine preserves, crystallized ginger, garlic and salt. Process until ginger and garlic are finely chopped. Remove to medium bowl. Stir in vinegar.
Cut wings in half at joint. Place on prepared pan. Brush with 1/2 cup apricot-ginger glaze. Roast 15 minutes. Remove pan from oven. With tongs, turn wings over. Brush wings with remaining glaze. Roast 15 minutes more or until juices run clear.
To crisp skin, if desired, increase oven temperature to broil. Broil wings for 1 to 2 minutes or until skin is crisp.
