Southwest Au Gratin Potatoes

ingredients
2 tablespoons vegetable oil
1/4 cup chopped red onion
1 jalapeno pepper finely chopped and seeded
2 pounds sliced Yukon gold potatoes
1 pound sliced baking potatoes
1 1/2 teaspoon steak seasoning
1 cup chicken stock
1 cup cheese sauce (see note)
1 cup grated smoked cheddar cheese
1 cup grated pepper jack cheese
directions
Heat oil in a saute pan, add the onion and jalapeno cook until soft. Add the potatoes and brown slightly. (You may need to brown these in batches.)
Place all of the ingredients in a greased baking dish, mix well and cover with foil. Bake at 400 degrees F for 40 minutes. Remove foil add some extra cheese on top and bake for 5 minutes until the cheese is golden brown.
Note: You can use a mix or jarred cheese sauce, or make your own: 1/4 cup milk, 3/4 cup Velveeta cheese) heat in a sauce pan until creamy.
