If you thought potatoes au gratin were a no-no for dieters, you can rejoice! Skim milk and low-fat shredded cheddar keep the calories low and the flavor high for this cheesy potato bake.

1 tablespoon butter 1 medium onion, thinly sliced 1 tablespoon all-purpose flour 2 cups fat-free milk 2 pounds potatoes, peeled and thinly sliced 1 cup shredded low-fat cheddar cheese, divided 1 teaspoon salt 1/4 teaspoon black pepper
directions
Preheat the oven to 375 degrees F. Grease a 2-quart baking dish.
Melt the butter in a large saucepan over medium heat. Add the onion and cook, stirring frequently, until the onion is soft, about 5 minutes.
Stir in the flour and mix until incorporated. While stirring, slowly add the milk and continue stirring until the sauce is smooth.
Add the potatoes and mix well. Bring the mixture to a boil, then reduce the heat to a simmer. Stir in 3/4 cup of the shredded cheese along with the salt and pepper. Mix well.
Transfer the potato mixture to the greased baking dish. Bake at 375 degrees F, uncovered, for 1 hour.
Cover the dish with foil and continue to bake for 20 minutes, or until the potatoes are tender.
Set the oven to broil.
Remove the foil from the baking dish and sprinkle the remaining cheese over the potatoes. Return the baking dish to the oven and broil 6-inches from the heat source for 1-2 minutes, or until the cheese is bubbly and browned.
Remove the dish from the oven and let stand for 5 minutes before serving.
