Individual Potato Gratins

ingredients
salt and white pepper to taste
1 1/2 cup heavy cream, or to taste
grated Gruyere cheese, if desired
1 1/4 pound small potatoes, peeled and thinly sliced
1 medium Golden Delicious apple, peeled, cored, and sliced thin
directions
Preheat the oven to 425 degrees F. Butter well eight 1/2 cup gratin dishes or ramekins.
Layer the potatoes and apples in the dishes, sprinkling each layer with salt and pepper. Add enough cream to cover the potato mixture. If desired, sprinkle with the Gruyere.
Arrange dishes in a large roasting pan, add enough water to come halfway up the sides of the dishes, and bake for 45 minutes or until golden brown. Let rest 5 minutes before inverting onto plates.
