Creamy Au Gratin Potatoes With Ham And American Cheese

ingredients
20 pounds red potatoes, peeled
8 pounds fully cooked ham, cubed
4 cans (10.75 ounce size) condensed cream of celery soup, undiluted
2 quarts milk
1/2 cup all-purpose flour
6 pounds processed American cheese, cubed
2 teaspoons black pepper
2 teaspoons paprika
directions
Peel potatoes if desired; cut into cubes. Cook potatoes until tender; cool. Place about 6 cups of potatoes each in eight greased 13-in. x 9-in. x 2-in. baking pans. Add about 3-1/2 cups of cubed ham to each pan.
In a large Dutch oven over medium heat, combine soup, milk and flour until smooth; bring to a boil. Cook and stir for 2 minutes, or until thickened. Add cheese, pepper and paprika. Reduce heat and cook until cheese is melted.
Pour about 2-1/4 cups of sauce into each pan. Cover and bake at 350 degrees F for 40 minutes. Uncover and bake 5-10 minutes longer or until bubbly.

I got 120 servings out of this but I am sure that varies by what is considered a serving size. Everyone enjoyed it and it was nice to have instructions on how to make a big batch of it!
Hi, just a heads up: this recipe makes 8 9x13 pans, and only serves about 80 adult people as an entree or 100 lightly as a side dish. Much improved IMO by the addition of a cup of fresh parsley, chopped and a couple of cups of finely diced sauteed onions.
