Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

under 30 minutes
ingredients
1 (12 inch size) pizza crust (homemade, refrigerated dough, or boboli thin crust)
2 boneless, skinless chicken breast halves, sliced thin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup flour
2 teaspoons olive oil
3 cloves garlic, finely chopped or pressed
3/4 cup Alfredo sauce
1/2 cup shredded mozzarella cheese
1/4 cup shredded Asiago cheese
2 tablespoons grated Parmesan cheese
1/4 cup sliced green onions
directions
Preheat oven to 425 degrees F.
If using homemade or refrigerated pizza dough, lightly grease a cookie sheet or pizza pan. Spread dough on pan and bake for 7 minutes or until crust is just starting to turn brown.
If using pre-made crust, place on ungreased cookie sheet.
Combine the salt, pepper and flour in a zip-top plastic bag and shake to mix. Add the chicken slices and gently shake to thoroughly coat. Remove the chicken from the bag and tap off any excess flour. Place on a paper plate or piece of waxed paper.
In a large, non-stick skillet, heat the olive oil over medium heat. Add the chicken to the pan and cook (turning occasionally) until golden brown crust is formed on all sides. Remove from skillet and set aside.
If using jarred Alfredo sauce, gently heat the sauce so it is easier to spread. Spread it on the baked pizza crust, leaving about a 3/4-inch space from the edge of the crust.
Arrange the chicken slices evenly on top of the sauce. Sprinkle the mozzarella, asiago, and parmesan cheeses evenly over the chicken and top with the sliced green onions.
Return the pan to the oven and bake for 10 minutes, or until the cheese is bubbly in the middle.
cook's notes
I add a little cayenne pepper to the flour mixture to spice things up.
