2 packages (8 ounce size) cream cheese, softened
1 cup finely grated carrots
1/2 cup chopped pecans
1/2 cup well-drained pineapple chunks
1/2 teaspoon lemon juice, or to taste
Place the cream cheese in a mixing bowl and beat on medium speed with an electric mixer until fluffy.
Stir in the carrots, pecans, pineapple, and lemon juice by hand.
Cover the bowl and place in the refrigerator for 30-60 minutes or until well chilled.
Use as a spread on bread or crackers. Store leftovers in the refrigerator in a covered container for up to 2 days.
