1 medium carrot
1 stalk celery
2 green onions
1 can (15 ounce size) chickpeas (garbanzo beans)
2 teaspoons mustard
2 tablespoons sweet pickle relish
black pepper, to taste
Peel and grate the carrot. Finely chop the celery and spring onions. Drain and rinse the chickpeas; mash them with a fork, leaving some chunks.
Mix all ingredients together and season to taste. Use in thinly-sliced brown bread sandwiches. Keeps for one week in the refrigerator.
