butter, as needed
1 cup sugar
1/2 cup water
1 can (12 ounce size) Spanish peanuts
directions
Line a baking sheet with foil. Grease the foil with butter and set aside.
Rub the inside of a heavy, deep skillet with butter. Add the sugar and water to the skillet and stir constantly over medium-high heat until the sugar is dissolved.
Bring the liquid to a boil without stirring. Swirl the skillet occasionally but do not stir. Cook until the sugar liquid has turned golden brown.
Stir the peanuts into the sugar and stir until completely coated in the mixture.
Remove the pan from the heat and let cool for 1-2 minutes then spread the peanuts out onto the prepared foil to cool completely. When cool, break into pieces.
Store the peanuts in an airtight container at room temperature for up to 2 weeks.
