1-2 hrs
ingredients
4 cups pecans
1/2 cup butter
2 egg whites, at room temperature
1 cup sugar
1/2 teaspoon salt
directions
Preheat oven to 250 degrees F.
Place the pecans in a single layer on a large baking sheet or jelly roll pan. Toast for 30 minutes, stirring gently occasionally. Remove the pan from the oven and place the pecans in a bowl and set aside.
Place the butter on the baking sheet and return to the oven to melt.
Meanwhile, beat the egg whites until stiff. Slowly beat in the sugar and salt. Beat until thick. Gently fold in the pecans.
Increase the oven temperature to 300 degrees F. Make sure the butter is evenly spread in the baking pan. Spread the pecans over the butter. Bake for 45 minutes, stirring every 15 minutes.
Remove from the oven and break up any large pieces.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
