This boozy plum jam is the perfect way to use up any extra plums you may have. The brandy in the recipe gives it a rich flavor that is perfect on toast or as a topping for pork chops.

4 pounds plums, pitted and chopped
3/4 cup water
1 tablespoon lemon juice
1 package (1.75 ounce size) powdered pectin
7 cups sugar
1 cup brandy
Combine plums, water, brandy, lemon juice, and pectin in a large sauce pot. Bring to a rolling boil over high heat, stirring constantly.
Add sugar; return to a rolling boil. Boil hard 1 minute, stirring constantly.
Pour hot into hot jars, leaving 1/4 inch head space. Adjust caps. Process 10 minutes in boiling water bath.
