Banana-Maraschino Cherry Jam

ingredients
3 cups mashed bananas
2 tablespoons lemon juice
1/3 cup chopped maraschino cherries
6 1/2 cups sugar
1 bottle (6 oz.) Certo
directions
Combine first 4 ingredients in large kettle. Stir constantly and bring to a rolling boil over high heat. Boil hard for 1 minute, stirring constantly.
Remove from heat and stir in Certo. Pour into hot jelly jars and seal.

We love this recipe. Everyone I have given a taste to loves it. I have a list of people who are waiting for me to make my next batch. Good for bread and peanut butter, muffins, ice-cream, etc.

I've made jam/jelly for almost 50 years and rarely have a batch go bad. I made four batches and none of them jelled! I tried mashing bananas, chopping them and just about everything. The yield is way off, it foams badly even with butter, the texture is poor. I do have a freezer full of ice cream topping that is kind of pinkish yellow -- maybe someone else will have better luck
