This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.


2 cups sliced zucchini
4 ounces crumbled feta cheese
1 cup thinly sliced green bell pepper
1 cup tomato wedges
1/2 cup sliced onion rings
1 tablespoon chopped fresh oregano
1 tablespoon olive oil
Preheat the grill to medium heat.
In a bowl, mix together the zucchini, feta, green bell pepper, tomato, onion, and oregano. Sprinkle with the olive oil and toss to coat the ingredients in the oil.
Place the vegetable mixture on a large square of double-thickness aluminum foil. Wrap up the vegetables in the foil to create an envelope.
Place the foil envelope on the grill and cook for 10 minutes. Turn the foil pack over and cook for 8 more minutes or until the vegetables are tender.
Remove the foil pack from the grill and serve the vegetables hot.

This recipe was delicious and so easy. The cook time was dead on too. A perfect side dish to throw on the grill alongside a main course.
