ingredients

4 cups frozen broccoli, cauliflower, and carrot blend or similar vegetable mixture, thawed
1/2 cup chopped onion
1 can (10.75 ounce size) cream of mushroom soup, undiluted
1 jar (2 ounce size) chopped pimientos, drained
2 cups shredded American cheese

directions

Grease the inside of the crock pot.

In a bowl, mix together the vegetables, onion, cream of mushroom soup, pimiento, and American cheese. Mix well.

Transfer the vegetable mixture to the crock pot. Cover the crock pot and cook on low heat for 2-3 hours or until heated through. Mix well then serve the cheesy vegetable bake hot.
