ingredients
1 package (20 ounce size) frozen mixed vegetables (without potatoes)
minced onion, to taste
2 tablespoons butter, softened
2 tablespoons butter, melted
1/2 package buttery round crackers
8 ounces processed cheese product, cubed
directions
Combine onion (to taste) with frozen vegetables and cook until barely tender. Drain vegetables and add the softened butter and cheese. Stir mixture until blended.
Place in a casserole dish (2 qt. size). Crumble the crackers and combine with the melted butter. Sprinkle evenly on top of the casserole.
Bake for 30 minutes at 325 degrees F.
