Butter, olive oil, and a little sauteed garlic bring out the natural sweetness of the sugar snap peas and lets them shine as your new favorite side dish.

1/2 pound sugar snap peas
1 1/2 teaspoon butter
1/2 teaspoon olive oil
1 clove garlic, peeled and finely minced
1/2 teaspoon coarse salt
freshly ground black pepper
Bring a medium-size pan of water to the boil. Snap the ends from the peas and pull the strings. When the water comes to a boil, add the peas and time 2 to 3 minutes, until just tender. Drain in a colander and run cold water over the peas until cooled. Put the peas on a paper towel-lined plate and pat with another paper towel to absorb excess moisture. (The peas can be done 8 hours ahead to this point. Wrap in dry paper towels and then in a plastic bag and refrigerate.)
Heat the butter and oil over medium heat. Add the garlic and saute 1 minute, until soft and fragrant. Put the peas into the pan and heat through, stirring often. Stir in the coarse salt, heating for 30 seconds. Season with pepper and serve.

used frozen precooked.very bad. tried fresh,what a great taste.

Lovely recipe! Snap peas aren't really in season now but my store had some that looked decent and they were good in this recipe. I think you can probably get away with less fresh peas in this even because of the cooking method so this is a good recipe for off peak produce.

I burned the garlic a little, but the taste was very good! Even after boiling them they were crispy after sauteed. I did not even add pepper and the taste was enough.

Sometimes the simplest ingredients make the best recipes. The flavors were great - the freshness of the snap peas was really the focal point. The buttery garlic mixture was a nice enhancement.
