ingredients
2 tablespoons peanut oil
4 large carrots, peeled and cut into strips
1 large green bell pepper, cut into 2-inch strips
1 large onion, sliced into rings
2 stalks celery, cut into strips
1 tablespoon soy sauce
2 tablespoons water
1 tablespoon ketchup
directions
Heat the oil in a wok or large skillet over medium heat. Add the carrots, bell pepper, onion, and celery. Cook, stirring constantly, for 3 minutes.
In a bowl, mix the soy sauce, water, and ketchup until mixed. Stir into the vegetables.
Cook, stirring frequently, for 10 minutes or until the vegetables are cooked to the desired doneness.
Serve hot over rice or Chinese noodles.
