It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


1/2 cup chopped celery, including tops
1 onion, chopped
1/4 cup butter
6 cups dry bread crumbs
1 sweet potato, cooked, peeled, finely chopped
1/2 cup chicken broth
1/4 cup chopped toasted pecans
1/2 teaspoon poultry seasoning
1/4 teaspoon rubbed sage
1/2 teaspoon salt
1/4 teaspoon white pepper
In heavy skillet, melt butter and cook celery and onion until tender, stirring frequently. Add remaining ingredients and toss gently to coat.
Grease a 4-5 quart crockpot and fill with stuffing, 1/2 to 3/4 full. Cover crockpot and cook on Low for 4-5 hours until stuffing is hot.

I have to say, this was the best stuffing. I usually make a mashed sweet potato one, but the cubes was even better.
