Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Clam Stuffing Bake

ingredients
2 tablespoons chopped celery
2 tablespoons chopped green bell pepper
2 tablespoons chopped red bell pepper
4 1/2 teaspoons chopped onion
2 tablespoons butter
1/4 cup shredded carrot
1/2 cup chicken broth
1 cup seasoned stuffing mix
1 can (6.5 ounce size) minced clams, drained
1/4 teaspoon lemon juice
directions
In a saucepan, saute the celery, peppers and onion in 1 tbsp butter until almost tender. Stir in carrot and broth. Bring to a boil. Stir in stuffing mix. Remove from the heat; cover and let stand for 5 minutes. Stir in clams.
Transfer to two 6-ounce ramekins or custard cups. Melt the remaining butter; stir in lemon juice. Drizzle over the stuffing mixture. Bake uncovered at 350 degrees F for 15-20 minutes or until heated through and golden brown.
