Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

Cheeseburger rice is the best of both worlds. You get the delicious flavor of a cheeseburger, with the satisfying texture of rice.

ingredients
1 pound ground beef
1 3/4 cup water
2/3 cup ketchup
1 tablespoon prepared mustard
2 cups uncooked instant white rice
1 cup shredded cheddar cheese
directions
Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring frequently, until browned and cooked through. Drain off any excess grease.
Stir the water, ketchup, and mustard into the beef. Mix well. Bring the liquid to a boil.
Stir the instant rice into the skillet. Mix well. Sprinkle the rice and beef with the cheese.
Cover the skillet and reduce the heat to a simmer. Let cook for 5 minutes until the rice is tender, the liquid is absorbed, and the cheese is melted.
Serve the cheeseburger rice immediately.

My picky eater of a husband absolutely adores this recipe. I swear it's like feeding a two yr old sometimes. Recipe is simple and I think you could dress it up (but I don't or he probably wouldn't eat it LOL!)
