Calamari In Tomato Sauce

ingredients
3 pounds frozen calamari (squid), thawed and cleaned
1/2 cup oil
3 cloves garlic, chopped
1/4 teaspoon crushed red pepper
2 cups canned tomato sauce
1 tablespoon parsley, chopped
salt, to taste
2 tablespoons red wine
directions
Cut calamari into small strips. Place in saucepan and cook over medium heat for 15 minutes (do not add water).
Drain all but 1 cup of liquid. Add oil, garlic, chili pepper, sauce, parsley and salt. Cover and simmer on low for 25 minutes (do not cook over higher heat or the squid will get tough).
Add wine and cook for an additional 5 minutes. Adjust seasonings to taste. Serve over cooked rice or noodles.
