Green Beef Curry In Coconut Milk (Gaeng Kiew Wan Neua)

ingredients
6 ounces green curry paste
2 ounces cooking oil
1 quart coconut milk
1 pound beef fillet, sliced
6 ounces eggplant
5 kaffir lime leaves, stripped in small pieces
1 1/2 tablespoon red and green spur chili, sliced diagonally
2 ounces fish sauce
1 1/2 tablespoon sugar
1 ounce sweet basil leaf
directions
Saute green curry paste in the oil. Pour in the coconut milk and stir well.
Add the sliced beef. Bring to a boil and add small eggplant and kaffir lime leaves. Simmer until vegetables are cooked then add the chili, fish sauce and sugar.
Stir to mix well then add the sweet basil leaf and stir again. Remove from heat and serve while still hot.
