Zesty Slow Cooker Italian Beef Tips

ingredients
2 pounds beef stew meat
1 cup frozen small whole onions
1 jar (6 ounce size) pitted Kalamata or Greek olives, drained
1/3 cup sun-dried tomatoes in oil, drained and chopped
1 jar (28 ounce size) marinara sauce
directions
Place the beef stew meat and frozen onions in the bottom of a crock pot. Top with the olives and sun-dried tomatoes.
Evenly pour the marinara sauce over all.
Cover the crock pot and cook on low heat for 5-6 hours or until the beef is tender and cooked through.
Serve the beef and sauce over pasta or mashed potatoes.

I used chopped onions and omitted the olives. I liked the sun dried tomatoes in it.

Unexpectedly delicious! The Kalamata olives were a fun addition (you could use plain ripe olives if you wish). You can also toss the meat with flour first and lightly brown before adding to the crockpot if you prefer that texture (I often do that).
