under 30 minutes
ingredients
3 medium yellow squash
1/2 package smoked sausage or Polska kielbasa
1 large onion
2 tablespoons butter
2 cups shredded cheese (optional)
directions
Slice onion and smoked meat, put in large skillet with butter. Saute until onion is tender and meat is browned.
While meat and onions are cooking, slice squash in about 1/4" slices. Add squash and toss to mix all ingredients. Salt and pepper can be added now (Cajun seasoning is very good in this also).
Turn the heat down to simmer, put a lid on and simmer for about 10 minutes until the squash is tender.
If desired, sprinkle cheese on and let melt.
