ingredients
8 ounces Polish or other fully cooked sausage of your choice, sliced 1/2-inch thick
1/2 cup chopped onion
1 teaspoon oil
1 can (14.5 ounce size) diced tomatoes, drained
1 can (14.5 ounce size) cut green beans and potatoes, drained
1 teaspoon or more hot pepper sauce to taste
1 cup shredded Monterey jack cheese
directions
Cook onion and sausage in oil in skillet until onion is tender. Add tomatoes, simmer for 5 minutes.
Stir in green beans and potatoes, heat 3 minutes. Stir in hot pepper sauce. Sprinkle with cheese and heat until cheese is melted.
Serve over rice with additional hot pepper sauce if desired.
